- •1 pound Medium pasta shapes (rotini, penne, or shells)
- •2 pounds Lean ground beef
- •1 medium Green bell pepper, diced
- •1 medium Red bell pepper, diced
- •2 cans (15.5 ounces each) Sloppy Joe sauce (canned or homemade)
- •1 can (14.5 ounces) Petite diced tomatoes
- •2 tablespoons Tomato paste
- •2 cups Shredded cheddar cheese
- •to taste Salt and pepper
Instructions
- 1Preheat your oven to 350°F.
- 2Cook the pasta according to package directions until just al dente, then drain and set aside.
- 3In a large skillet over medium-high heat, brown the ground beef, breaking it apart as it cooks, until no longer pink.
- 4Add the diced green and red bell peppers to the skillet and sauté for 3-4 minutes until they begin to soften.
- 5Stir in the sloppy joe sauce, petite diced tomatoes, and tomato paste, mixing well to combine.
- 6Simmer the sauce for 5 minutes to blend the flavors, then season with salt and pepper to taste.
- 7In a large baking dish, combine the cooked pasta with the beef and sauce mixture, stirring until evenly coated.
- 8Top the casserole with the shredded cheddar cheese, spreading it evenly across the surface.
- 9Bake in the preheated oven for 25-30 minutes until the cheese is melted and bubbly.
- 10Remove from the oven and let rest for 5 minutes before serving.
