- •1 pound Italian sausages, sliced
- •2 tablespoons olive oil
- •3 garlic cloves, minced
- •2 large (any color) bell peppers, sliced
- •½ cup chicken broth
- •to taste salt
- •to taste black pepper
- •1 tablespoon fresh parsley, chopped
Instructions
- 1Heat olive oil in a large skillet over medium-high heat until shimmering.
- 2Add the sliced sausages to the hot skillet and cook for 5–6 minutes, stirring occasionally, until browned on all sides.
- 3Transfer the cooked sausages to a plate and set aside.
- 4Add the sliced bell peppers to the same skillet and cook for 3–4 minutes, stirring occasionally, until they begin to soften.
- 5Add minced garlic to the skillet and cook for about 30 seconds until fragrant.
- 6Pour in the chicken broth, scraping up any browned bits from the bottom of the skillet.
- 7Return the sausages to the skillet and season everything with salt and pepper to taste.
- 8Let the mixture simmer for 3–4 minutes until the peppers are tender and the sauce reduces slightly.
- 9Stir everything together to coat the sausages and peppers evenly with the sauce.
- 10Transfer to a serving plate and garnish with fresh parsley before serving.
