Ingredients

  • •1 pound ground beef
  • •1 medium onion, diced
  • •2 cloves garlic, minced
  • •2 tablespoons taco seasoning
  • •1 can (15 oz) black beans, drained and rinsed
  • •1 cup corn
  • •1 can (14.5 oz) diced tomatoes
  • •2 cups shredded cheddar cheese
  • •½ cup salsa
  • •1 tablespoon olive oil
  • •to taste salt and pepper

Instructions

  1. 1Heat olive oil in a large skillet over medium-high heat.
  2. 2Add the diced onion and cook until softened, about 3 minutes.
  3. 3Add minced garlic and cook for 1 minute until fragrant.
  4. 4Brown the ground beef in the skillet, breaking it into small pieces as it cooks for about 5 minutes.
  5. 5Drain any excess grease from the skillet.
  6. 6Stir in the taco seasoning and cook for 1 minute.
  7. 7Add the black beans, corn, diced tomatoes with their juice, and salsa to the skillet.
  8. 8Stir everything together and simmer for 5 minutes to blend the flavors.
  9. 9Season with salt and pepper to taste.
  10. 10Sprinkle the shredded cheddar cheese evenly over the top.
  11. 11Cover the skillet and cook for 2 minutes until the cheese is melted.
  12. 12Serve hot with your favorite toppings like sour cream, cilantro, or lime wedges.
